Vegetable Biriyani / How to make spicy vegetable biriyani

Vegetable biriyani is a simple but delicious and healthy one pot meal with complete nutrition.After making this recipe my home was filled with exotic aroma that lingered for hours.Even my daughter enjoyed this as the spice level was not much.Depending on your preferences, you could eliminate or add some vegetables, even i was in shortage of potato so couldnt add that.Adding mushrooms or soya chunks enhance the taste but its upto you.This is a quick dish which can be prepared in a jiffy.Try this awesome recipe and let me know how it was!!

Cooking Time : 20 mins
Serves – 3 to 4

Ingredients:

Basmati Rice or Seeraga samba Rice – 2 cups

Water – 4 cups

Carrot,beans,cauliflower,peas,potato each half cup.

Onion-2 large thinly sliced

Tomato-1 large.

Green chilli – 2 (without splitting)

Ginger Garlic Paste – 1 TBL spn

Coriander Leaves-1/2 cup

Mint leaves- 1/2 cup

ThickUnsour Curd / Yogurt -1 cup(optional)

Red chilli powder – 2 tsp or to taste

Garam Masala powder(optional)

Turmeric Powder – 1 tsp

Coriander Powder /Malli podi – 1 tblspn

Oil – 3tblspn

Ghee – 1tblspn

Salt to taste

Lemon Juice as needed

For Seasoning:

Fennel Seeds / Sombu / Saunf – 1 tsp

Cinnamon / Pattai – 1 small stick

Cloves / Krambu – 5

Bay Leaf – 1

Star anise -1


Method:

Wash and Soak the basmati rice for around 30 min.I used seeraga samba rice ,then drain it and set aside.

Now in the same oil, crackle all the seasoning ingredients and add in the whole green chilli,onion and fry on a low heat till brown.

Add in ginger garlic paste and saute for a min.
Add in coriander leaves and mint leaves,tomatoes and spice powders. Mix this well,let the oil can be separated from the masala.

Add in yogurt and give a good mix. Now throw in the cut vegetables and saute it for 10 mins till the veggies are half cooked and well coated with the masala.

Add in the soaked rice and combine well. Pour in 4 cups of water and season with some salt,lemon juice and mix well.

Now bring this mixture to a boil and add 1 tsp of ghee and cover the pressure cooker and cook it for 4 counts of the whistle. Now turn off the heat and let the steam subsides by itself.

Once the steam has all been gone, open the pressure cooker and fluff it with a fork. You can add some fried onions at this point and mix well and serve it with onion raita.
